This potato salmon pie recipe was not planned, it just came up—a little background story to this fabulous dish. On our way back from church, my daughter Mel who loves fish wanted to eat salmon with potatoes for lunch. The simple recipe of salmon and potatoes, which is literally making a tomato sauce with salmon and mixing it with boiled potatoes is what I usually make at home but this time, she asked for cheese on it. And, I thought to myself, why not?

On arriving home, I commenced with the meal and soon realized I had puff pastry in the fridge. It then clicked! Why not make the recipe she longed for with the puff pastry as a topping? Guess what? She loves pies and that did it for me. A mummy too in her post, added fresh veggies in her pot pie. You can diversify if you are a veggie lover. But for this recipe, I made it simple. My version of this easy potato salmon pie is ideal for a walking lunch as it can be eaten with friends and family during a chat in your garden. It is a meal that fits all.

Equipment to make this potato salmon pie

Bakeware

Kitchen Knives

Silicon Spoon

Pots

Chopping board

Ingredients

4 slabs of salmon

7 cloves of chopped garlic

1 large onion

Spritz of olive oil

A pinch of salt

1 cup of tomato puree

A pinch of dry pepper to taste

500g of mozzarella cheese

300g of boiled potatoes

1 egg

1 pack of puff pastry

Method

Begin by peeling your potatoes. Cut them into cubes, add boiling water, some salt, and cook. While this is cooking, start making your sauce.

In a separate pot, pour in olive oil into your hot pot. When sizzling, pour in the chopped garlic cloves and onions. When the onions have sautéed, add in the tomato puree. Allow this to fry. When it has fried and does not look like raw tomatoes, add in your seasonings.

At this point, you can also add in your salt and pepper. Next, add the slabs of salmon to the tomato sauce, reduce the heat, and cover the pot. The low heat will steam the fish and make the fish release its own juice.

Check on your boiled potatoes at this time and remove from heat when cooked thoroughly. Strain the water and set aside.

After a few minutes, check on the fish and if it is tender, add in your cooked potatoes. Also add in a handful of mozzarella cheese and mix thoroughly.

Preheat your oven to 180ºc at this point and start getting the food ready for the oven.

In your bakeware, pour over the potato salmon cheese food. Spread the dish to cover the edges of the bakeware. Sprinkle over more cheese and spread over the food, your slate of puff pastry.

Break an egg, beat it, and use it to egg-wash the puff pastry. Make sure the entire puff pastry is well-basted.

Pop it into the oven and bake for about 10 minutes till the puff pastry cooks and comes out golden.

Remove from oven and serve with some cooked veggies or salad. You can also it alone if you so wish.
