My kids always ask for pancakes on Saturdays and the most beautiful thing is mixing and flipping these fluffy rounds with them.

 

 

At home, we make delicious pancakes by trying out new things always. This recipe is even better because we used fresh cherries from the fridge to make homemade cherry sauce and this was the most delicious topping to go on these pancakes.

 

If you do not have buttermilk, do not worry because this recipe does not call for buttermilk. The secret in the batter is the egg whites. All you need to do is separate your eggs, beat your egg whites, and gently fold your whites into the pancake batter! It is the trick!

Weigh your ingredients

It all starts with the right ingredients, quantity, and the batter mix. Not weighing out your ingredients, or over mixing the batter can make the pancakes turn out hard or flat. Having a very thick batter is not ideal as it will be hard and not cook the pancake thoroughly. A very runny batter also will cause the pancakes to be flat and have lots of air pockets. The consistency of the batter as well as the folding of the egg whites is what makes the pancakes wow!

I like to use a hand whisk to first beat the whites and sugar together and then beat the rest of the ingredients with the whisk. Do not forget that beaten egg whites do not like any form of oil or grease so if you want to beat egg whites at any time, ensure that your bowl and whisk are free of grease.

Simple and Easy Fluffy Pancakes with Cherry Sauce

Ingredients
  • Flour - 3 cups
  • Salt - 1tsp
  • Sugar- ½ cup for the egg foam and pancake mix
  • Baking Powder- 1tbs
  • Eggs (seperated) - 2
  • Melted butter - 40g
  • Grated nutmeg- 1½ tbs
  • Whole Milk - 2½ cups
  • For the Cherry Sauce
  • Fresh cherries - 2 cups
  • Sugar - ½ cup
  • Lemon- squeeze of ½ medium sized
  • Lemon zest
  • Grated ginger to taste
Directions
  • Step 1 Weigh out your ingredients. Using a clean bowl, beat your egg white with a part of the sugar. This will help it form stiff peaks. Set aside.
  • Step 2 In your second bowl, combine together the flour, salt, rest of the sugar, baking powder, yolks, grated nutmeg and milk.
  • Step 3 Using the same hand whisk you used for the egg whites, beat the ingredients until smooth.
  • Step 4 Add in your melted butter and beat it into the batter until smooth.
  • Step 5 Using a rubber spatula, start adding your egg whites and gently fold it into the batter until you do not see any white streaks. The batter will be very fluffy.
  • Step 6 Heat up a non-stick skillet and on medium heat, gently scoop the fluffy batter on to the skillet.
  • Step 7 When you see the bubbles beginning to pop, then it is time to flip the pancake to cook on the other side. It should be golden brown when flipped. Repeat with the remaining batter.
  • Step 8 To make the cherry sauce, use a skillet or pot, pour over the cherries and the sugar. Stir together until the cherries start to bleed out its juice. You can also use a masher to help mash out the cherries.
  • Step 9 When the cherries start to thicken into a sauce, grate some lemon zest and add a squeese of lemon into the sauce. Stir together and turn of heat.
  • Step 10 Using a fine mesh, strain your cherries sauce. Discard the flesh and cherry seeds. Pour your cherry sauce into a bowl for serving.
  • Step 11 Enjoy your delicious pancakes by drizzling over your perfect cherry sauce!
