Tips for Meal Prep and Planning
So 2 years ago, my youngest daughter developed hives rashes or also known as urticaria. It came suddenly and I didn’t know what brought about it or how it came about. I immediately took her to the hospital and after examination, the pediatrician confirmed what it was but the sad thing was that there was no solution for it. She only informed me that it would pass with time or she would learn to live with it and manage it. At the time, it was an acute one as sometimes, it would appear at a particular time at night and she would itch nonstop or during the day. This made me wash all her bedsheets and duvet in bleach and hot water more frequently, just in case she was reacting to the bed covers and I stopped the pets (Chloe and Pipoca) from entering her room but nothing worked.
I quickly realized that I had to cut out all possibilities of the causes from food to drinks or clothing and to my amazement, on a particular day, she ate in school, and when I went to pick her up, she informed me that once she finished her lunch which the school provided, she felt uncomfortable and immediately had rashes all over and swollen lips. I realized it might be a food allergy and had to stop her from eating at school while deciding to make food daily for school.
Alas, the challenges were now how I could keep up with making fresh food daily for her and her siblings every morning. But anyway, I began waking up as early as 5:30 am to 6 am to prepare the food, hit the gym at 6:30 am and return to prepare them for school at 8:00 am. So, to simplify my busy life, I decided to create a weekly meal plan and meal prepping became my go-to.
I fell in love with zip bags and mason jars as I could tag the date and name the meal so as to quickly heat up, grab and go. My weekly plan will be shared in my next article 🙂 So, the miracle worked. Once I started this, she never had the reaction again! The hives rashes just disappeared. This came as a blessing in disguise as it made me learn how to better organize myself as well as manage my time. Busy mom or dad, what are you waiting for? Organize better, save time!
