Who doesn’t love a good pound cake? It’s simple, buttery, and the perfect base for all kinds of delicious toppings like whipped cream, berries, or a drizzle of lemon glaze. Today, I’m sharing an easy pound cake recipe that is perfect for beginners and seasoned bakers alike. Also, it is a wonderful treat to whip up when you’re short on time but want something homemade.
Growing up, I learned how to make pound cake as my first cake recipe. Nigerian bakers always made dense cakes, so cake recipes typically featured pound cakes. Before my mom bought me an electric mixer, I learned to cream butter with a wooden spoon. When I started, my instructors guided me to cream the butter until it turned white. Achieving a pale color required a lot of hard work, especially compared to creaming butter with a wooden spoon.
My baking simplified when my mom bought me an electric mixer. That still did not solve the problem as we were always faced with power outages. This sometimes hindered the baking and would make me resolve to hand creaming.
Over the years, I invested in cake classes and courses and learned other baking techniques. This was the stepping stone to my world of cakes. From butter-based cakes, foam cakes to oil-based cakes, I learned the different baking techniques and what made each cake turn out the way it did.
MAKING EASY POUND CAKE
This easy pound cake is an easy creaming method that is ideal for beginners. It requires little care and minimal ingredients. The fun of eating cakes is when it is made with less sugar, less time and lots of love. Just weigh out all your ingredients. It saves you time and makes the recipe straightforward.
For my birthday, I made this amazing cake and it turned out gorgeous. I combined this pound cake with a carrot cake that I also made and it was the perfect combination. Using chocolate drips and red berries, I decorated the cake.

Butter
When buying your butter, invest in quality butter. Quality butter does not mean expensive. I use inexpensive quality unsalted butter to make this cake. However, you can also salted butter and it will taste great.
Eggs
Using fresh eggs gives your cake a good structure. It is always nice to keep your eggs and other cake ingredients at room temperature.
Sugar
This is a liquid-solid. This means that sugar becomes liquid once it comes into contact with any liquid. I also recommend using refined granulated sugar to bake this cake. Slowly drizzle it in with the machine running. This will help the butter to cream better.
Flour
Ideally, I prefer self-raising flour. This ensures the lightness of the batter. So, in this recipe, I used half and half. This means half SRF (self-raising flour) and half APF (all-purpose flour).
SCRAPE THE MIXING BOWL
Scraping the sides and bottom of the bowl ensures the whole batter is well mixed. Please do this and save yourself butter and flour chunks that don’t mix well with the batter.
Easy Pound Cake
Ingredients
- 250g butter
- 200g sugar
- 5 medium eggs
- 375g self-raising flour/APF
- 240g whole milk
- 1 drop of vanilla paste or essence
Directions
- Step 1 Preheat your oven to 180ºc and prepare your 8’ baking pan.
- Step 2 In your mixing bowl, begin by creaming your butter. When it is soft and fluffy, drizzle in your sugar.
- Step 3 Beat the butter and sugar until well blended. The sugar should mix in well into the butter.
- Step 4 Add this point, you can then add your flavouring. Always scrape the sides and bottom of the bowl to ensure all the butter is mixing well with the sugar.
- Step 5 Add your eggs one at a time and beat well. When all the eggs are well beaten with the rest of the ingredients, it is then time to add the last two ingredients. I prefer to fold in the flour and milk to as to avoid overbeating which makes the cake tough.
- Step 6 To finish, begin by adding 1/3 of the flour in the bowl, fold it into the batter and alternate it with the whole milk. Add your flour again followed by the milk and then the flour.
- Step 7 So, you start with flour and end with flour.
- Step 8 When you have mixed the flour and milk into the batter, allow the mixer to mix it for roughly 20 seconds. This is just help smoothen out the batter.
- Step 9 Pour the batter into the prepared cake pan and bake for about 30 minutes or when a toothpick inserted comes out clean.
- Step 10 When cake cooks, allow to cool for about 5-10 minutes, remove from pan and serve simple, or with a dusting of sugar or with any frosting of your choice.
Tips for the Best Pound Cake
- Room Temperature Ingredients: Ensure that the butter and eggs are at room temperature before you start. This helps them mix more evenly and gives the cake a smooth texture.
- Do Not Overmix: Overmixing can lead to a dense cake. Mix just until the ingredients are incorporated.
- Pan Size Matters: If you use a different-sized pan, you may need to adjust the baking time slightly. Keep an eye on the cake around the 60-minute mark to avoid overbaking.
- Mice-en-place: Weigh out your ingredients before baking. It simplifies it.
- Leftovers pound cake? No problem! Store them in an airtight container in the freezer and use them as cake pops.
Topping Ideas
- Lemon Glaze: Whisk together powdered sugar, a splash of milk, and lemon juice for a tangy-sweet glaze.
- Whipped Cream and Berries: Top with freshly whipped cream and a handful of mixed berries for a refreshing dessert.
- Chocolate Drizzle: Melt some chocolate and drizzle it over the cake for a more decadent option.
