Suya is one of my favorite dishes to make with my kids. They enjoy helping me prepare the meat and threading it onto the skewers. It is a fun and easy way to get them involved in the kitchen.

 

To make this dish even more special, I serve it with a side of grilled pineapple chunks and a creamy avocado dip. The pineapple adds a sweet and tangy contrast to the spicy suya, and the avocado dip cools down the heat and adds some creaminess. It is a mouthwatering and Instagram-worthy appetizer that everyone will love!

 

*HOW TO MAKE NIGERIAN SUYA WITH A TWIST*

These Nigerian suya skewers with a twist are easy to make, portable, and full of flavor. They will surely impress your guests and family with their amazing flavors and presentation. Here are some tips and tricks for making these Nigerian suya skewers with a twist:

 

*MARINATE YOUR MEAT WELL*

The secret to making these Nigerian suya skewers juicy and tender is to marinate your meat well for at least an hour, or preferably overnight. This will allow the meat to absorb the flavors of the spices and become more flavorful. You can use any kind of meat you like, such as beef, chicken, lamb, or goat. I prefer to use beef sirloin, cut into bite-sized pieces.

 

*MAKE YOUR OWN SUYA SEASONING*

You can buy ready-made suya seasoning from African grocery stores or online, but I like to make my own. It’s easy and you can adjust the ingredients to your taste. All you need is roasted peanuts, dried red chili peppers, garlic powder, onion powder, salt, and black pepper. Grind them together in a blender or food processor until you get a fine powder. Then add your twist: garam masala, ginger powder, and harissa paste. These are some amazing spices from India, China, and North Africa that will add a lot of flavor and heat to your suya. Mix well and store in an airtight container for up to a month.

 

*GRILL YOUR SKEWERS TO PERFECTION*

You can use a charcoal grill, a gas grill, or an oven to grill your Nigerian suya skewers. Preheat it to medium-high heat and lightly oil the grates if you use a charcoal or gas grill. If you use an oven, preheat it to 200°C (180°C fan) and line a baking sheet with foil. Thread your marinated meat onto wooden or metal skewers, leaving some space between each piece. Grill or bake for 15 to 20 minutes, turning occasionally, until the meat is cooked and charred on the edges. Sprinkle some more suya seasoning over the skewers before serving.

 

*MAKE YOUR SIDE DISHES IN A SNAP*

To make your grilled pineapple chunks, cut a fresh pineapple into bite-sized pieces and toss them with some brown sugar and lime juice. Grill them for 10 to 15 minutes, turning occasionally, until caramelized and juicy. To make your creamy avocado dip, mash two ripe avocados with some yogurt, lemon juice, salt, and pepper. You can also add some chopped cilantro or mint for some freshness. Serve your Nigerian suya skewers with your side dishes and enjoy!

  • Step 1 To make the suya seasoning, combine the peanuts, chili peppers, garlic powder, onion powder, salt, and black pepper in a blender or food processor and grind until you get a fine powder. Transfer to a bowl and add the garam masala, ginger powder, and harissa paste. Mix well and store in an airtight container for up to a month.
  • Step 2 To make the Nigerian suya skewers, cut the beef into bite-sized pieces and place them in a large ziplock bag or a bowl. Add 1/4 cup of the suya seasoning and the oil and toss to coat the meat well. Seal the bag or cover the bowl and refrigerate for at least an hour, or preferably overnight.
  • Step 3 To grill the Nigerian suya skewers, preheat your grill or oven to medium-high heat and lightly oil the grates or line a baking sheet with foil. Thread the marinated meat onto the skewers, leaving some space between each piece. Then grill or bake for 15 to 20 minutes, turning occasionally, until the meat is cooked through and charred on the edges. Sprinkle some more suya seasoning over the skewers before serving.
  • Step 4 To make the grilled pineapple chunks, cut the pineapple into bite-sized pieces and toss them with the brown sugar and lime juice in a large bowl. Grill them for 10 to 15 minutes, turning occasionally, until caramelized and juicy.
  • Step 5 To make the creamy avocado dip, mash the avocados with a fork in a small bowl. Add the yogurt, lemon juice, salt, and pepper and mix well. You can also add some chopped cilantro or mint for some freshness.
  • Step 6 Serve your Nigerian suya skewers with your grilled pineapple chunks and your creamy avocado dip and enjoy!
