Looking back on a magical 2017 kitchen experiment that became a cherished family tradition

A Sweet Memory That Still Makes Us Smile

It was 2017, and I was finding my rhythm as a mom of three in Cascais. I needed to keep everyone entertained during those long Portuguese school holidays. My kids had discovered pop tarts through American cartoons and were obsessed with these magical breakfast pastries. That was when I decided to try creating a homemade pop tart recipe that everyone could enjoy.

But you know me – I couldn’t just buy a box of those artificial-tasting rectangles. My Nigerian heart said, “We can make these better, with real ingredients and a little spice magic.” This homemade pop tart recipe started as a sunny afternoon activity and became one of our most treasured family baking memories.

Looking back now, eight years later, I realize this was the moment that sparked our family’s love for baking together. It was probably when I first started dreaming about turning my passion into a business – though I had no idea I’d eventually run my own cake business from our Cascais kitchen!

Why This Recipe Became Our Family Legend

The kids still talk about ‘that time we made pop tarts from scratch’ – my youngest was tiny in 2017, but she still remembers standing on her step stool, pressing fork patterns into the edges. There’s something magical about recipes that stick in children’s memories for years. This homemade pop tart recipe is one such wonder.

What made this particular baking adventure so special wasn’t just the delicious results (though they were incredible). It was how we accidentally created our own little production system, with each child having their own important job. Back then, I was just trying to keep everyone busy and happy. Now, as a professional baker, I recognize we were actually teaching real kitchen skills!

Description

Nigerian-spiced chocolate pop tarts made from scratch. Flaky pastry, rich chocolate filling with nutmeg. Kid-friendly recipe, 12-14 servings, 2 hours total time.

Ingredients

    Chocolate Filling Recipe

    The Pastry Dough

    Instructions

    1. Make the dough and let it chill (we learned patience is key!) In a bowl, add the flour, sugar, baking powder, salt and butter, mix until the butter is distributed well throughout the dry mixture. Add the egg and start drizzling in the water and knead until your dough comes together when pinched with your fingers. Divide the dough in half, wrap each half in plastic wrap and pop them in the fridge for 45 minutes.
    2. Roll to 3mm thickness – the kids loved taking turns with the rolling pin
    3. Cut into rectangles about 8cm x 11cm – our ruler became a kitchen tool, Assembly line magic – bottoms, filling, tops, seal with forks
    4. Egg wash for that golden shine
    5. Bake at 180°C for 15-20 minutes until golden

The Nigerian Twist That Made Them Special

Even back in 2017, I couldn’t resist adding my cultural touch. While the kids thought we were just making “fancy pop tarts,” I was quietly introducing them to the warm, aromatic spices that remind me of home.

The nutmeg was what made these pop tarts unforgettable. The kids didn’t know what made them taste so special, they just knew these were better than anything they could buy in a store.

    What I’ve Learned Since Then

Writing about this homemade pop tart recipe now, with years of professional baking experience behind me, I can see things I missed in 2017:

The Life Skills We Were Building: What felt like just fun and games was actually teaching measuring, following instructions, patience, and teamwork. These same skills show up when my kids help me with my cake business now.

The Cultural Bridge We Were Creating: By adding Nigerian spices to an American treat in our Portuguese kitchen, we celebrated our multicultural family story. The kids were learning that food can carry memories and traditions across continents.

The Foundation We Were Laying: This single afternoon of pop tart making sparked a love for baking that continues today. My kids now confidently help me test recipes for my blog and even suggest flavor combinations for my professional cakes.

How This Recipe Changed Our Family

Looking back, I realize this wasn’t just about making pop tarts. It was about:

    • Creating traditions: We still make these during school holidays
    • Building confidence: The kids learned they could create something amazing from scratch
    • Sharing culture: Nigerian spices became part of our family’s everyday story
    • Starting a journey: This led to more baking adventures and eventually my cake business

The photos from that day in 2017 still make me smile. You can see the pure joy in their expressions as they baked with mommy. Those weren’t staged blog photos – they were real family moments, messy and perfect.

From Pop Tarts to Professional Baking

It’s funny how life unfolds. That afternoon in 2017, I was just trying to entertain the kids during school holidays. I didn’t know I was planting seeds for my future. The confidence I gained from my family’s love for my homemade pop tart recipe grew into my cake business. So did the joy of teaching kitchen skills and creating something special with my own hands.

Now, when customers ask about my baking philosophy, I often think back to those pop tarts. The same attention to quality ingredients, the same love for adding unexpected flavor touches, the same belief that homemade always beats store-bought – it all started in our kitchen in 2017.

    Why I’m Sharing This Now

As I’ve grown my blog and my baking business, I’ve realized that some of our best family memories deserve to be shared. This homemade pop tart recipe represents everything I believe about food: it should bring families together, carry cultural stories, and create lasting memories.

Plus, with school holidays up again, maybe some of you are looking for that perfect summer activity that’s both fun and meaningful. This recipe delivered then, and I know it will deliver now.
