This easy peach fried rice is a quick and delicious plant-based stir fry you can always make at home. It is healthy and will contribute to weightloss and total wellness…
Yes, you heard me right. Normally, peaches are used in desserts like cakes, cobblers, pies, and other cold desserts of ice cream and yogurt.
Sometimes, I have this urge to eat Asian food because of the smokiness of the dishes. This is actually why I decided to make this dish using my wok. I just needed that smokiness of the wok and that is the secret!
After making the food, I took some for lunch at work the next day. Guess what? My colleague shared my lunch and was amazed at how yummy the food tasted. She just could not believe it was peaches that changed the game in the fried rice.
Adding veggies to this dish also is another trick to a quick weight loss goal. Yes! Heat up the wok, add your veggies, fruits, and rice, and eat yourself to wellness. It is easy to fall in love with this dish and crave to make it over and over again.
It cannot be overemphasized that this dish is packed full of nutrients and it ideal for vegans. The meatless nature of the dish is what endears it to me while the peaches gave structure to the dish making the fleshy fruit feel like meat.
In this post, I will be sharing this recipe that will make you enjoy peaches not just as a dessert but as a cooked fruit or as food cooked as a hot dish.
During the summer, I had lots of peaches and nectarines and many of them were super sweet. But sadly, I couldn’t use all the fruits at once and some of them started getting wilted.
This stone fruit, also known as peaches, endure both heat and cold cooking temperatures so you can use them for ice cream and yoghurt. You can even use it in cakes, cobblers, pies, etc as I mentioned above.
But in this case, I decided to use it to cook and that was how I thought about making fried rice with peaches. And guess what? It was a wonderful dish.
The meal turned out so well and was super quick and very easy to make.
TIPS ON MAKING THIS EASY PEACH FRIED RICE
USE A WOK
This cannot be overstressed. This is the blazing result of achieving this restaurant-style healthy dish that is cheaper when made at home.
WASH AND PEEL THE PEACHES
What I did was peel the peaches and just use the fruit flesh to make this food. This is essential to enjoying this meal. If your peaches are super fresh, peeling them might not be super easy. To easily peel them, simply boil some water, drop in your peaches, and after a few minutes pull them out. Pat them dry and peel the fruits.
I didn’t use the peaches with the skin on because if you use the skin, it will feel chewy, and you have a tendency not to enjoy the meal when eating the food. However, if you peel the skin before cooking food it comes out wonderfully
USE FRESH PEACHES AND NOT CANNED
I advise you not to use canned peaches to make this dish, as they soak in syrup and become mushy. So, if you don’t have fresh peaches in your kitchen, then you have to buy fresh peaches to make this dish. The wow factor in this meal is using fresh fruits in making it. Of course, this is why I recommend using peaches when in season to make this healthy and delicious food. Using preserves will not give you the same result as fresh peaches would.
ADD PEACHES LAST INTO THE WOK
Your cut peaches should go in last into your wok. This is to make sure they don’t mush all up due to excess heat. You want the fruit’s color and texture to remain vibrant and solid even after cooking the meal. So add in your cut peaches just before you’re about turning off your heat.
Peach Fried Rice
Ingredients
- Extra Virgin Olive Oil
- Chopped Garlic
- Chopped Onions
- Zucchini
- Garlic Powder
- Dry Pepper
- Pinch of Salt
- Cooked Rice
- Peeled and cut Peaches
Directions
- Step 1 To begin, I washed my old peaches that were wilted on the skin. After washing them I peeled the skin, cut them in little cubes, prepare the other ingredients for the fried rice like carrots, red bell Peppers, green bell Peppers, some onions, garlic, salt and pepper, zucchini and oil.
- Step 2 Heating up my wok of course, I begin by frying my extra virgin olive oil with some garlic and then the onions.
- Step 3 Put in our rice fry it quickly, adding the vegetables fry them also and at last we will now add the peaches. This is like the last step before taking the rice down from the heat and that turned out wonderfully well.
- Step 4 You can’t beat the taste because when you combine these two, the peaches and rice with the other vegetables, it sort of tastes like a sweet and sour dish and it comes out deliciously well.
