  • 100g sour cream (about ½ cup)
  • 1 teaspoon vanilla extract
  • 200g all-purpose flour (about 1 ½ cups)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 30g peanut flour (about ¼ cup)
  • ¼ cup milk
  • For the Peanut Butter Frosting (optional):
  • ½ cup creamy peanut butter
  • ½ cup unsalted butter (softened)
  • 1 ½ cups powdered sugar
  • 2-3 tablespoons milk (for consistency)
  • 1 teaspoon vanilla extract
Directions
  • Step 1 Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan. You can also line it with parchment paper for easy removal later.
  • Step 2 In a medium-sized bowl, whisk together the flour, baking soda, baking powder, and salt. This ensures that the leavening agents are evenly distributed throughout the flour, helping the cake rise properly.
  • Step 3 In a separate large bowl, mash the ripe bananas using a fork or potato masher until they are smooth with a few small lumps remaining. The bananas should be overripe, as they bring the sweetest flavor to the cake.
