This easy Portuguese choriço meatloaf is the easiest meatloaf you will ever make. The method is so simple, and it bakes in minutes. This gives you deliciousness on your table in a matter of minutes.

Whether you are having a brunch, or light dinner with your family and friends, the easy Portuguese choriço meatloaf is way to go. Gently cut them into slices and serve some tea or great Portuguese red wine. You can also spread some Portuguese cheese or butter for an extra decadence. However, you want to eat this delicious Portuguese choriço meatloaf, you can never go wrong.

 

Portuguese dishes are very savoury and delicious. They are also very quick to prepare. This easy to make meatloaf is simple and straightforward. It is a dump all in one bowl method. But we will be using Portuguese smoked sausage which is called choriço. Choriço changes the level in cooking most Portuguese dishes. Because of the smokiness of the smoked pork sausage, the recipes get so captivating, and you just find yourself eating without knowing it. Whenever my family visits from Nigeria and I make meals using smoked choriço sausage, everyone eats so well and compliment on how yummy the meal was. The choriço was also one of the things that won my heart when I met my husband some years back in Lagos, Nigeria. He would make scrambled eggs with this choriço, and I always wondered why his scrambled tasted so delightful. The secret was the choriço. It was appetizing and I could eat a good breakfast even while pregnant. All thanks to choriço.

 

My Portuguese mother-in-law made an easy Portuguese choriço meatloaf and that made me simply fall in love with this recipe. It was an evening we came to visit, and she served this hot delicious loaf with some soup. It was an evening to remember. The slices splattered with queijo da Serra was a memory that lingered for a long time.

 

After all these years, I decided to try making this recipe at my home. The most fascinating thing was the simplicity of the recipe and the quick timing too.  I am so delighted to share this recipe which I learned from my mother-in-law and share the tricks to getting it right.

 

Tricks to this easy Portuguese choriço meatloaf

 

Choose the right choriço

In Portugal, you will find various types of smoked Portuguese sausages on the supermarket aisles. This can be quite confusing for non-Portuguese. If you read the labels, you will notice that the choriços all come from different regions of the country. This is where the difference comes in. Different regions make their choriço in their own unique style. This in turn determines the taste, texture and the colour. Some choriços have a more intense hue than others. This also is a determinant in the taste intensity of the smoked sausage. The choriço has to be cut into cubes to enable easy mixing and eating.

 

Use olive oil for Portuguese choriço meatloaf

A good quality olive oil will yield a great taste in the meatloaf. Try to use a good olive oil with a medium intensity. Not too strong and not too light. The result would be great.

 

White wine as the liquid

In Portugal, wine is used a lot in the Portuguese cuisine. It makes food taste so good. You don’t need any expensive wine for this meal, but you can use any good cooking white wine to make this recipe.

 

Say cheese to the choriço meatloaf

Cheese is so gooey that it makes this bread extra moist. Adding some cheese to the recipe guarantees extra yumminess. I used mozzarella cheese for the Portuguese meatloaf, but you can use any good cheese for this recipe. Just make sure it is shredded.

Easy Portuguese Choriço Meatloaf

This easy savoury Portuguese choriço meatloaf is perfect as an afternoon snack or an early dinner with soup.

Ingredients
  • Flour - 250g
  • Baking Powder - 1tsp
  • Pinch of salt & pepper
  • Eggs - 3
  • White wine - 150ml
  • Olive oil - 100ml
  • Choriço - 1/2 cubed choriço
  • Mozzarella cheese - 150g
Directions
  • Step 1 Preheat your oven at 180ºc.
  • Step 2 Pour the flour into the bowl. Add the baking powder, a pinch of salt and a pinch of black pepper. Whisk them togther and then begin adding the wet ingredients.
  • Step 3 Make a whole in the centre of the flour, pour in the eggs, the white wine, olive oil and then genly mix them together.
  • Step 4 Pour in the cut choriço, mozarella cheese and fold all gently.
  • Step 5 Spray your baking pan with a non-stick cooking spray or butter and then pour the batter into the prepared pan.
  • Step 6 Bake the loaf batter in the 180ºc oven for about 30 minutes.
  • Step 7 After it bakes, allow to cool and enjoy your delicious savoury meatloaf.

 

Tips & Tricks:

* Weigh out your ingredients before baking. It simplifies it.

* Leftover loaf? No problem! Store it in an airtight container in the freezer and reheat when needed.

* Get creative! Use other types of meat to make this awesome loaf.
