Bananas are fruits that are usually available all year round. Full of potassium, calcium, and other minerals, it is interesting that many discard this delicious fruit especially when the skin starts turning brown. They are extremely versatile and can be used in numerous ways to get the best out of them. For such a fruit rich in potassium as this, it is essential in maintaining the blood pressure and also ideal for athletes or those training to shed some pounds and build muscle. Whenever I go to the gym, I always notice that lots of people always start the day with a banana before hitting the treadmill or other equipment in the gym. This is so because bananas contain natural slow-release sugars which give a good endurance to perform an early morning workout without loss of strength.
This tropical yellow superfood is also a natural antacid and is always soothing for upset stomachs and ulcers. They are great for the gut and help in protecting against ulcers, and bones, and is a proven energy booster.
I love bananas and love to eat them with toasted peanuts, use them as my sweeteners for smoothies, use them in place of sugar in cereals or porridges, pair them with full cream to make delicious banana ice cream, and freeze them to use up later by adding them to cookies or even using them for cakes and bread.
When it comes to this fruit, the list is endless and you cannot go wrong with this superfood. With this yellow superfood, I made this easy and delicious banana cake which I cut into squares and they are amazingly yummy. I shared these wonderful squares at church and believe me, it was enjoyed by all. It is ideal for an afternoon snack or evening tea with friends and family.
With a recipe as straightforward as this, all you need is a hand mixer or a balloon whisk. I will be sharing the step-by-step method below.
Easy Banana Sqaures
Ingredients
- Ingredients:
- -1/2 cup of grapeseed oil or any other neutral oil of your choice
- - 75g brown sugar
- - 75g white sugar
- - 2 large eggs
- - 2 medium-sized bananas, mashed
- - 100g sour cream
- - 1 cap full of vanilla essence
- - 213g All Purpose Flour
- - 1 tsp baking soda
Directions
- Step 1 Preheat your oven to 180ºc and prepare your baking pan.
- Step 2 In a mixing bowl, pour in your oil, sugars and beat together. Due to the clumpy nature of the brown sugar, you might have to beat more time so the brown sugar immulsifies with the oil. When thoroughly combined, add your eggs and beat again. Your mixture will now be slightly lighter in colour. Add the sour cream and whip this up. After beating this in for a few seconds, add in the mashed bananas and flavouring. Beat again and then add in your dry ingredients – all-purpose flour and baking soda to the wet ingredients. At this point, I switch to using my ballon whisk or baker’s whisk to ensure that the flour and baking soda are well incorporated into the batter. After mixing this in, you will have a great batter that isn’t too runny or too thick.
- Step 3 Pour batter in your prepared pan and bake till toothpick inserted into the cake comes out dry or bounces back when touched.
- Step 4 Cut into squares and serve with a drizzle of powdered sugar (optional).
