So, weekends are my best days of the week as I love spending time with my family, especially with the kids. At this time of spring, what can be more beautiful than making pancakes with the rain falling outside and the grey skies? During this season too, nature blessed us with lemons and you can find lemon trees in almost any Portuguese garden with the golden yellow fruits all bringing promises of hope.
This simple yet delicious pancake has a zesty feel to it and the blueberry sauce is also made with pure lemon juice. With the right dash of the lemon juice, the sauce does not get tangy and so allows you to indulge yourself in this goodness.
This quick and easy pancake recipe is the way to go. With very few ingredients, you can be sure to start your weekend perfectly with no hassle. More interestingly, you can make this with no equipment and I mean no hand mixers. With the berries in season, I used fresh blueberries for the pancakes and for the blueberry sauce too. If you do not have fresh blueberries, you can substitute them with frozen blueberries or any other berries of your choice.
Blueberry Pancakes
So easy and yet quick. This is the ideal recipe for a quiet weekend as you can make it without the noise of a handmixer. Just work out those hands and get an excellent breakfast to be enjoyed with the family!
Ingredients
- Flour
- Sugar
- 1 tbs Baking Powder
- 1 Egg
- 1tsp Nutmeg
- 2 cups Milk
- 2 tbs melted Butter
- 1 cup Blueberries
- For the Sauce
- 3/4 cup Blueberries
- 1 tbs Sugar
- 1 medium-sized Lemon
Directions
- Step 1 In a bowl, pour in the flour, sugar, baking powder and nutmeg. Whisk together and then add in your egg, milk and melted butter.
- Step 2 With your baloon whisk, mix the batter until smooth with a medium-light consistency. Do not allow it to be too runny as you do not wish to make a crepe 🙂
- Step 3 On the stove or gas top, heat up your skillets and scoop the batter on to the non-stick skillet. Also toss in some blueberries on the batter to cook.
- Step 4 When batter has bubbles appear around the surface and the bubbles begin to pop, it is then ready to flip.
- Step 5 Cook till each side browns.
- Step 6 To make the sauce, use the rest of the sugar, add the blueberries and when they begin to caramelize and bleed, add the lemon juice.
- Step 7 Enjoy the pancake with the blueberry-lemon sauce.
