Ingredients

  • 2.5 cups basmati rice
  • 3 cups water
  • 3 tbsp lemon juice
  • 1.5 tbsp olive oil extra virgin
  • 2 tbsp frozen or fresh basil
  • 4 cloves garlic
  • salt to taste pinch

Instructions

  • Rinse the rice: Start by rinsing your rice under cold water until the water runs clear. This helps remove excess starch and keeps the rice from getting mushy.
    Sauté the rice: In a medium saucepan, heat the olive oil or butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the rinsed rice and sauté for another 2-3 minutes until the rice becomes slightly translucent.
    Cook the rice: Add water or broth and a pinch of salt. Stir well and bring it to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.
    Add lime: Once the rice is done, remove it from heat and let it sit for 5 minutes with the lid on. Fluff the rice with a fork, then stir in the lime juice and zest.
    Add basil: Stir in the chopped basil. Taste and adjust seasoning by adding more salt or lime juice if needed.
    Serve: Serve your lime rice warm alongside your favorite dishes, like grilled chicken, fish, or even as a base for burrito bowls and tacos.
